Baby chicken "baked in ground"
We were inspired by the original recipe from an old cooking book. In the recipe, the half-cooked chicken was wrapped in cloth and buried in the ground. After a couple of days, people put it out and cooked it till it was ready to eat. We decided to preserve our chicken in lard to make it more juicy. To add a bit of a smoky flavour we cook it in the oven. The finishing touch - beetroot powder - is added as an ode to the original recipe to give the chicken an earthy taste.
